China markers are very useful for marking down exactly what type of gel you are using. It is normally used when a new gel sheet is cut up and the gel number is marked in either the corner of the gel or dead center. Marking in the corner keeps the number hidden from view, but some designers prefer marking in the center so they can tell what gel number is in a given light (without having to leave the stage). We call this a China Marker, but it's also known as a Grease Pencil.
